I love 8Eyes, one player is warrior and other is his Falcon.

River City Ransom is great. Capcom scrollers like Cadillac and Dinosaurs is good.

My go to NES co-op has always been Contra and Chip n' Dale Rescue Rangers.

If you are looking for a 2vs game I suggest Spy vs. Spy ... Damn that game is fun screwing each other over.
